Taking a butchers at new Tettenhall Bistro

An award-winning Wolverhampton butchers has opened a bistro within its butcher’s shop, using their own produce to create dishes on the menu.
Aptly named SEATS @ Robinsons, the bistro has been opened by owner of Robinson’s, Steve Robinson and his son, Tom, who is a qualified chef. Having previously worked as a chef at many high-end establishments before opening his own street food business, it has been a lifelong dream of Tom’s to own his own restaurant. Owner of Robinsons, Steve Robinson, said, “It’s a really exciting time for us as we move into a new chapter of our business. Each generation of our family has made their own mark on the shop and this is Tom’s chance to make his.â€

From brunch to a Sunday roast, the Tettenhall bistro will be open Wednesday – Sunday, also offering a 3-course set menu on Friday & Saturday evenings. Dishes range from delicious sweet potato fritters with harissa, yoghurt and poached egg to a mouth watering pork belly with black pudding potato cake, celeriac puree and roast apple.

Tom also added, “This is something I’ve always wanted to do. It’s been both a stressful and extremely exciting time getting everything up and running, but this is going to be a great opportunity for us. “We often have customers asking how best to cook their meat or what they can serve it with. Being able to use our produce within the menu is a fantastic opportunity for us to show the different ways our meat and locally sourced deli products can be used whilst also showing off their fantastic quality.â€

The butchers, which was first established in 1905, has undergone several changes over the years. Originally found on Victoria Street and the Dudley Road, Robinson’s relocated in 1984 to Tettenhall Village, where it became a renowned local business. Since then, the butchers has undergone an expansion into a delicatessens, grown its staff and passed through generations of the Robinson family.

Robinsons is a Q-Guild butchers which has recently been nominated for two Wolverhampton Independent Retail Excellence Awards – Independent Retailer of the Year and Signal 107’s People’s Favourite Business, which is voted for by the public. Steve commented, “We are honoured to have been shortlisted for the Independent Retailer of the Year Award and for Signal 107’s People’s Favourite Business. It would be the cherry on the cake if we were to win and it would top off what has been a fantastic year for us so far – fingers crossed!â€
