Q Guild members visited Aubrey Allen in Coventry, gaining insights into sustainability, dry-ageing, product innovation and the company’s recently renewed Royal Warrant.

Members were welcomed behind the scenes at Aubrey Allen, one of the UK’s most respected butchery businesses. The visit offered an in-depth look at their approach to sourcing quality native breeds, building lasting partnerships with farmers, and ensuring consistency and flavour for chefs and customers alike.

The group explored Aubrey Allen’s state-of-the-art dry-ageing facilities and learned how careful control of humidity, airflow and timing enhances tenderness and taste. There was also discussion on reducing waste, burger production, and the integration of cheese and seasonal produce.

A highlight of the day was hearing about the company’s achievement of a new Royal Warrant under King Charles III, which now includes cheese. The visit underlined Aubrey Allen’s blend of tradition, innovation and uncompromising standards, offering valuable inspiration for fellow Guild members.
